Low-fat or non-fat yogurt has too much water relative to fat, so it forms large ice crystals when frozen. Whole-fat greek yogurt keeps the texture dense and creamy, closer to a frozen cheesecake than an ice cube.
It's usually spread too thick or not fully frozen through. Keep the layer to about ¼ inch and freeze a full 2–3 hours — a thin, fully solid sheet cracks clean; a thick or half-frozen one just bends and smears.
Fresh is better here — frozen berries release extra water as they thaw against the yogurt, which softens the sheet and makes it soggy instead of snappy. If you only have frozen, pat them very dry first.
