The Way

  1. Bring a wide pot of well-salted water to a rolling boil. Drop the gnocchi in and pull them out the moment they float - usually 90 seconds to 2 minutes. Overboiled gnocchi will never crisp; they just fall apart in the pan.
  2. Drain them well and let them sit a minute so the surface steam-dries. A wet gnocchi steams instead of searing.
  3. In a wide pan over medium heat, melt the butter with the olive oil and add the sage leaves. Let them fry until they go translucent and stop sizzling, then lift them out onto paper - they crisp as they cool. Keep the butter.
  4. Add the sliced garlic to the same butter and cook gently until pale gold and fragrant, not browned.
  5. Lay the gnocchi in a single layer and leave them alone. Let one side blister to a patchy gold - you'll hear them squeak against the pan when they're ready to move. Turn once and blister the other side.
  6. Pour the cream over in one steady unbroken stream, right around the gnocchi rather than onto them. Let it come to a low bubble and thicken for a minute.
  7. Take the pan off the heat and add the parmesan in two handfuls, swirling the pan rather than stirring. It folds straight into the cream and turns glossy - no strands, no stretch. That's the whole difference between a cream nappe and a cheese pull.
  8. Loosen with a splash of hot water if it tightens. Season with black pepper, tip into a warm bowl, crumble the crispy sage over and shower with more parmesan. Eat immediately, while the shells are still crisp.

midnight tip. the crisp is the whole point and it has a short life - the shells go soft about three minutes after the cream goes on. so have the bowl warm and ready before you pour, and don't walk away. if you want a guaranteed crunch, hold back a few seared gnocchi and scatter them on top at the end instead of saucing them.

Questions

fresh or shelf-stable gnocchi?

both work. shelf-stable (the vacuum-packed kind) actually sears a little better because it holds less water - you can even skip the boil entirely and go straight into the butter, which gives the crispiest shell. fresh gnocchi is more tender inside but needs the quick boil first and a careful hand in the pan.

why won't mine get crispy?

too wet, too crowded, or moved too soon. drain properly and let them air-dry a minute, keep them in a single layer with space between, and leave them alone until they release on their own. if they stick, they aren't ready yet.

can I use milk instead of cream?

not for this one. the sauce is a butter-and-cream emulsion held together by the parmesan, and milk doesn't carry enough fat - it splits or stays thin. if you want it lighter, use less cream rather than swapping it out.

why add the cheese off the heat?

same reason as any emulsion sauce - direct heat makes parmesan seize into strings instead of melting into the cream. off the burner, swirled rather than stirred, it goes glossy and folds right back in.
